Our lovely nanny, Dean, made this delicious white cake for many birthdays when the kids were little. Always elegantly made with a theme, like this Elmo one for Sofi. It is made with buttermilk and is really moist, heavier and delicious. It is wonderful with cream cheese icing.

 2.50 cups flour
 1 tsp baking powder
 3 ⅔ cups buttermilk or sour milk
 1 tsp vanilla
 2 cups sugar
  tsp salt
 ½ tsp baking soda
 ½ cup butter
 4 egg whites

Combine flour, sugar, baking powder, baking soda and salt.

Add buttermilk, butter and vanilla. Beat on low speed for 30 seconds, scraping bowl. Beat on medium to high speed for two minutes, scraping bowl occasionally.

Add egg whites and beat for 2 minutes more.

Pour into pans and bake at 350ºF for 30 - 35 minutes or until toothpick comes out clean. Cool for 10 minutes.

Loosen sides and remove from pans. Cool thoroughly and frost.

Use two greased & floured 9.5" round pans or one 9" x 13" oblong pan.
