This is a favorite old recipe that we make for Christmas and Thanksgiving.

turnip puff
Yields4 Servings

 1 large turnip or rutabagas
 1 piece of soft bread crumbs
 2 well-beaten eggs
 flour (use judgement - usually just a spoonful or two)
 1 tsp brown sugar
 ½ tsp baking powder
 ½ tsp each salt & pepper
 2 tbsp butter
Topping (optional)
 a handful of bread crumbs, or crushed chips or corn flakes, dotted with butter

Note: This recipe is fairly small. If you are cooking for a bigger group, double or triple the recipe. I usually use 6 or more turnips/rutabagas which leaves some for leftovers 🙂

Peel turnip, cut into chunks and boil until soft. Mash well.

Add one slice of soft bread (broken into small chunks)

Add beaten egg, butter, flour brown sugar, baking powder, salt & pepper and beat well.

Top with bread crumbs and dot with butter.

Bake 20-30 minutes at 375º
