This recipe was from Sofi's grade 3 class cookbook, when all the kids brought in their family favorites.

Yields1 Serving
4 cups freshly popped popcorn, lightly salted
 1 cup brown sugar
 ½ cup butter
½ cup maple or corn syrup
 ½ tsp vanilla
 ½ tsp baking soda
1

Put popcorn in shallow baking pan.

2

In saucepan, mixed sugar, butter and syrup. Stir over medium heat until boiling. Continue boiling 5 minutes without stirring.

3

Remove from heat, add vanilla and baking soda.

4

If desired, nuts can be added now. Pour over popcorn, stir to coat well. Bake in preheated 250º oven for one hour, stirring a few times. It helps if you put some parchment paper in first.

5

Break apart and store in tightly covered container.
