This is a delicious recipe with a sweet orangey sauce - unless you hate cooked fruit 🙂 Use gluten-free panko crumbs for a gluten-free version.

Yields6 Servings
Chicken
 3 lbs boneless chicken breasts
 1 cup graham wafer crumbs, or gluten-free panko crumbs
 1 tsp salt
 ½ tsp each garlic powder, paprika, pepper
 2 beaten eggs
Sauce
 1 tbsp milk
 1 can mandarin oranges
 4 tbsp cornstarch
 1 tbsp sugar
 1 tsp ketchup

Combine graham crumbs, salt, garlic powder, paprika and pepper. Mix beaten eggs with milk. Dip chicken pieces into egg mixture, then coat with crumb mixture.

Place chicken on a greased baking sheet and bake at 425º for 20 minutes, then turn and bake for 15 minutes more, or until tender.

Sauce

Drain oranges and reserve juice. Combine juice with enough water to make 1 cup of liquid. Pour into saucepan. Add cornstarch, sugar and ketchup. Bring to a boil and cook for around 2 minutes, then add mandarin slices. Pour sauce over hot chicken on serving plate.
