I haven't made this for a while, but I remember it being a light-fluffy pudding.

Yields1 Serving
 1 envelope unflavoured gelatin
 ¼ tsp salt
 3 eggs, separated
 ¼ cup sugar or honey
 3 cups milk

In a double boiler, combine gelatin, salt, egg yolks and sugar. Stir in milk and keep stirring until it coats a metal spoon.

Refrigerate until mixture is slightly thicker. Stir in vanilla.

Beat egg whites until firm and fold into gelatin mixture.

Refrigerate until set.
