My friend Leslie's family used to make this a lot. Nice for an easy, stick-to-the-ribs dinner. Sometimes we add some extra sausages.

Prep Time20 mins
 2 cups minute rice (or make some rice, using tomato juice for part of the liquid)
 45 potatoes, peeled and sliced in rounds
 1 large onion, sliced
 minced garlic
 12 cups frozen peas and carrots
 1 tin tomato juice
 12 pkgs pork sausages

Layer ingredients in ungreased casserole dish, finishing with the sausages on top, then fill with rice and cover with tomato juice.

Bake at 350º for two hours, covered.
