Mom and Grandma used to make this one a lot - one of my favourite comfort foods.

Yields1 Serving
 5 potatoes, peeled (or more if you like a bigger potato layer)
 ¼ cup milk or cream
 1 tbsp butter (or to taste)
 1 lb ground beef
 1 onion, diced
 2 cloves garlic, minced
 1 pkg. onion soup mix
 3 cups vegetables of choice - carrots, celery etc, or use frozen mixed vegetables
 2 ¾ cups milk or water
 1 tsp oregano or italian seasoning
 ½ tsp pepper
 1 cup grated cheddar cheese (optional)

Boil potatoes in salted water, drain, then mash with milk/cream and butter. Season with salt and pepper.

Brown ground beef and salt with onion and garlic.

Add veggies, onion soup mix and milk or water, and spices. Heat to a boil. Reduce heat and simmer to reduce liquid (5-10 minutes).

Place mixture in a lightly greased casserole dish. Spread potatoes over top to cover entirely. Sprinkle with cheese and bake at 350º for 30 minutes.
