For many years, our friends Winston & Sherri visited us and cooked up fabulous treats. This was one of them. I remember juicing many little limes which took a while but it was delicious!

Yields1 Serving
Filling
 4 egg yolks
 1 can condensed milk
 ½ tsp cream of tartar
 ½ cup key lime juice (3-1/2 large limes juiced)
Graham crust (or use pre-baked crust)
 2 cups graham crumbs
 ½ cup melted butter
  cup sugar
Meringue
 4 egg whites
 4 tbsp sugar
 ¼ tsp cream of tartar
 salt
Crust
1

Combine ingredients and press into bottom and sides of pie plate. Bake at 375º for 8-10 minutes.

Filling

Beat egg yolks at high speed for 5 minutes. Add condensed milk and beat for 1 minute. Add cream of tartar, then lime juice and beat until smooth.

Spoon into crust. Bake for 15 minutes until set, then cool to room temperature.

Meringue Topping

Heat egg whites in double boiler with the sugar, stirring frequently. Beat at high speed until stiff peaks form. Spread over filling, seating to crust. Bake at 500º for 3-5 minutes.

(or can use lemon pie meringue - 2 tbsp sugar + 1/2 tsp baking soda, no cooking beforehand).
