A childhood favourite. We made this many times as kids. I love the cinnamon-sugar topping which would get crispy.

This is a photo of Krista and Matlock, who have nothing to do with the recipe, but I'd imagine Cookie Monster would like it, and the photo is very cute.

  cup Sugar
 2 tbsp Butter
 1 Egg
 3 ⅔ cups Flour
 1 tsp Salt
 2 tsp Baking powder
 1 tsp Vanilla
  cup Milk
topping
 ½ cup Sugar
 1 tsp Cinnamon

Cream sugar, shortening and egg together, then add flour and milk alternately, beat, then add remaining ingredients and vanilla.

Put batter in cake pan, then sprinkle mixed sugar and cinnamon across the top. Bake at 300º for 25 minutes.
