 sweet potato
 ½ cup black beans
 ½ cup cooked brown rice
 ½ cup cooked broccoli
 ¼ avocado, sliced

Cut a sweet potato in half, poke holes all over it with a fork, and bake at 400 degrees until tender (about 40 minutes)

After potato is cooked, layer it with the black beans, brown rice, broccoli and sliced avocado. To spice up the flavour, we added smoked paprika, cayenne and ground black pepper.
