These are the most delightfully crispy but soft yummy sugar cookies. I first had them when my friend on the ski team brought them to our race. Her mom had made them for all of us to enjoy on Valentine's Day. (That same mom also made all of us racing suits). I've made them pretty much every year since. They are fantastic with some pink icing made with the juice from marascino cherries or frozen strawberries, so they have a real fruit flavour.
Mix butter & sugar.
Add eggs & vanilla.
Sift dry ingredients, mix with butter mixture.
Chill dough for 2 hours.
Roll to 1/6th of an inch thick.
Bake on a greased cookie sheet at 375 degrees for 10 minutes.
We usually add a frosting made with icing sugar, butter, almond flavouring or maraschino cherry or frozen strawberry syrup, which turns it pink and gives it a real fruit flavour.
