Bacon-wrapped pineapple

This was part of a favourite recipes book that Rob & Linda made for me – delicious!

250 ml pineapple chunks (reserve 50 ml juice)

25 ml soy sauce

1 ml ground ginger

dash garlic powder

6 slices bacon, cut into thirds

  • Directions

Combine pineapple juice, soy sauce, ginger and garlic powder in a small bowl. Add pineapple and let stand 1-2 hours. Drain. Wrap a piece of bacon around each pineapple chunk and secure with a toothpick.

Preheat oven to 400-degrees F. Line baking sheet with baking parchment or aluminum foil. Bake until bacon is crispy, about 20-25 minutes.
