Grandma’s Lemon Cake & Glaze

This is a delicious and easy recipe that Grandma Betty used to make. It has pudding in it, so it’s very moist. We usually make it in a ‘bundt’ style pan, and then glaze it shortly after it comes out of the oven (still hot) with a lemon and icing sugar glaze that sets into the cake and gives it an almost crispy lemon topping after it cools.

1 Package Lemon Instant Pudding

1 Package Lemon Cake Mix

1/2 cup Oil

1 cup Water

4 Eggs

Glaze:

1 cup Icing Sugar

2 tsp Lemon Juice

Mix all ingredients together.
Cook in 350 degrees for 45-55 minutes.

GLAZE

Mix lemon juice and icing sugar and pour over cake while just out of the oven.
