2 chicken breasts (or bone-in pieces), can cook from frozen.
1/4 cup oil
1 cup water
1 tomato, chopped
1 onion, diced
2 tbsp jamaican curry powder
1 clove garlic, chopped (or to taste)
1 sprig thyme
2 slices hot pepper (optional), or jalapeno pieces.

Cut chicken into cubes. Brown curry powder with onions, garlic, tomatoe, thyme & pepper in oil. Add chicken and fry 5 minutes. Add water, lower heat, cover and simmer 30 minutes.
Serve with rice
