Mango, arugula & peanut salad

This is quite delicious! Pinos gris or sauvignon blanc is a good accompaniment. If you make it, add a photo as this one isn’t quite right.

1 tbsp peanuts, chopped or roasted

sesame seeds

2 tbsp olive oil

arugula leaves

1/2 lime (juice), or rice vinegar

1/2 tsp sugar

2 tbsp orange juice

1 ripe mango, julienned

2 red peppers, thinly sliced

2 scallions, sliced thin

1 tsp cilantro

1 tsp mint

blackberries

raspberries

avocado, sliced

Toast the peanuts in a skillet. Arrange the arugula on a plate and dress with a mixture of olive oil, lime juice, peanuts, cilantro and mint.
