1/4 cup dijon mustard
4 cloves garlic
2 tbsp balsamic vinegar
2 tbsp olive oil
1 tbsp Emeril’s rub
2 tbsp lemon juice

- Directions
Mix marinade ingredients together, poke holes in roast and marinate for at least 2 hours.
Caramelize one chopped onion then but them under the roast.
Cook in a pan on the BBQ, basting with marinade regularly. Can add some chicken broth to make a gravy after cooking.
