My friend Leslie’s family used to make this a lot. Nice for an easy, stick-to-the-ribs dinner. Sometimes we add some extra sausages.

2 cup minute rice (or make some rice, using tomato juice for part of the liquid)
4-5 potatoes, peeled and sliced in rounds
1 large onion, sliced
minced garlic
1-2 cup frozen peas and carrots
1 tin tomato juice
1-2 pkgs pork sausages
(this uses a shortcode which is kind of invisible in the divi view, don’t delete)

Layer ingredients in ungreased casserole dish, finishing with the sausages on top, then fill with rice and cover with tomato juice.
Bake at 350º for two hours, covered.
