- Ingredients
1 cup dry bread crumbs or gluten-free panko crumbs
1 tbsp grated orange rind
1 tsp salt
1/4 tsp pepper
2-1/2 pounds chicken, cut up
1/2 cup orange juice
1 chicken bouillon cube
1/2 cup boiling water
1/4 cup butter
1/2 cup honey

- Directions
Mix first four ingredients Dip chicken in orange juice and coat with crumb mixture. Put on foil-lined or oiled pan. Bake in preheated oven for 30 minutes.
Meanwhile, dissolve bouillon cube in water and add butter and honey, stirring until butter melts. Pour over chicken and baste frequently, 30-40 minutes longer, or until chicken is well-browned.
